Ripening cycles of the coffee are important for planning the harvest and post-harvest processing of the fruit and influence the sensory quality of the coffee beverage. In the Coffea arabica, the number of these annual cycles depends on the edaphoclimatic conditions, soil microbiota, altitude, and genotype. In this study, we present in an unprecedented way how the microbial communities (bacteria and fungi) of the soil and fruits of the coffee tree and the quality of chemical and sensory of coffee fruits can change depending on the harvest season. We also evaluated whether there is a relationship between changes in microbial communities (soil and fruits) and chemical and sensory panels of the coffee in two seasons. Cherry coffee fruits sampling and soil were carried out in September and November which have different edaphoclimatic conditions. Profiles of the microbial community and chemical and sensory panels of the samples were performed using the DGGE technique, Mid-infrared spectroscopy, and Specialty Coffee Association protocols. Microbial communities (soils and fruits) profile was different between distinct sampling periods. Composition of the coffee varies with the harvest since the coffees harvested in September have higher concentrations of caffeine and chlorogenic acids and lower concentrations of proteins and lipids compared to the samples collected later. A correlation between infrared spectrum and microbial community was observed in the second harvest period which had a final sensory score higher than another harvest. These results show that edaphoclimatic factors and microbial communities can be associated with the final quality of the beverage. O Espírito Santo é o maior produtor de café conilon do Brasil. A exploração da variabilidade genética da espécie Coffea canephora é de grande importância no programa de melhoramento de café Conilon do Incaper. Este trabalho objetiva comparar o desempenho de 11 progênies superiores de café robusta selecionadas no Incaper em 2013, provenientes de introdução de 26 FMI do Instituto Agronômico de Campinas (IAC) em 2004, com uma testemunha Conilon, no Sul do Espírito Santo. O trabalho foi implantado na Fazenda Experimental de Bananal do Norte em 2014 e as avalições foram realizadas de 2016 a 2018. Na média das três primeiras colheitas, para a característica produtividade de grãos, as progênies 1, 3, 4, 5, 8 e 10 foram estatisticamente diferentes da Testemunha. Observou-se no campo que a Testemunha foi muito sombreada pelas progênies, em função de sua menor arquitetura, o que pode ter contribuído pelo menor desenvolvimento vegetativo e baixa produção. Todas as progênies robustas apresentaram porte elevado e resistência à ferrugem. Nesse estudo, conduzido com irrigação, as progênies selecionadas e estudadas apresentaram características desejáveis, com exceção ao porte, possibilitando a utilização dessas per se e, ou em programas de cruzamentos controlados. O trabalho de campo terá continuidade, com avaliação das progênies também após a poda, no sentido de analisar a adaptação e longevidade ao longo de ciclos da cultura.
Espírito Santo is the largest producer of conilon coffee in Brazil. The exploration of the genetic variability of the Coffea canephora species is of great importance in Incaper's Conilon coffee breeding program. This study aims to compare the performance of 11 superior progenies of Robusta coffee selected in Incaper in 2013, from the introduction of 26 FMI from the Instituto Agronômico de Campinas (IAC) in 2004, with a Conilon witness in the south of Espírito Santo. The study was implemented at Fazenda Experimental de Bananal do Norte, Incaper in 2014 and the evaluations were carried out from 2016 to 2018. In the average of the first three harvests, for the bean productivity characteristic, progenies 1, 3, 4, 5, 8 and 10 were statistically different from the Witness. It was observed in the field that the Witness was very shaded by the progenies, due to its smaller architecture, which may have contributed to the lower vegetative development and low production. All robust progenies showed high size and rust resistance. In this study, conducted with irrigation, the progenies selected and studied presented desirable characteristics, except for size, allowing the use of these per se and, or in controlled breeding programs. The fieldwork will continue, with progeny evaluation also after pruning, in order to analyze the adaptation and longevity along a crop cycle.
